I can’t find clear answer. Will using Litchi in my iPhone allow DJI to brick my recently downgraded Mavic Pro? Does Litchi talk to DJI?

You can use any SW on your phone/tablet.
Everything will be fine. Trust me.

Any SW but the DJI app, right? I have heard that using the standard DJI GO will send data back to DJI and they will force an upgrade or brick your drone. I am a newbie here, so sorry if this is basic stuff.

Not total BS, but yes it'll always wanna upgrade, plus it sends info to dji, I'm not exactly sure because I use it offline but doesn't it upload flight logs? I know it also sends your phone info, and itll have your IP (location) , You don't want your flight logs posts , and you don't want DJI to know anything about you, or your usage. For standard dji go app what I do is clear all data for app, log in, only download offline maps, disconnect dji app from internet (firewall in my case) then connect remote to device. If I ever need a map change I clear data from app, then allow internet again, log in, download maps, disconnect.
